Slow Cooker Thursday - Souper Roast Beef

In my blogging travels, Menu Planning Monday led me to Diary of a SAHM and Sandra hosts Slow Cooker Thursday each week. In fact, this is the site where I found 40 Clove Garlic Chicken. So, here is my contribution for this week:

SOUPER ROAST BEEF
2 large onions, sliced 1/4" thick
1/4 c. butter
1 bottom round roast 3-4 pounds
5 c. water
1/2 c. soy sauce
1 envelope onion soup mix
1 garlic clove

Saute onions in butter until tender and put in crock pot. Place roast over onions. Mix remaining ingedients and pour over roast. Cover and cook on low for 7-9 hours or until tender. Let stand for 15 minutes and slice. Serve on hard crusty rolls with a side of the juices for dipping.
