I suppose just like I always have been taught -- thank the giver, tell them something you particularly enjoy about it or how you might use it (e.g. I love the particular pickling process you used), and then finish up with thanking them again or some other personal note.
Reading this article did remind me that I guess I wasn't thorough enough in my Christmas list. Ahhh...to be the owner of a pickled cow and calf.
(Okay...seriously...can ANYTHING be "art" if someone says it's art? Ugh!)
